Groundhog Day!

Just by the skin of our teeth, we managed to squeeze in a little Groundhog Day lunch between a basketball game, the inaugural baseball practice of the season and supper out with Grandma Juju! 


As I’ve discussed in prior years, we unwaveringly subscribe to the weather forecasting skills of our hometown and Southern bred General Beauregard Lee.  Well, call me crazy (or more kindly a wishful thinker), but I swear I heard on the news that he didn’t see his shadow and that spring was on its merry way.  I happily chalked it all out on my board and announced to the littles that we’d breaking out the shorts in no time flat when Sister, Mother and Honey called me out on the mistake.  Lee did in fact see his shadow and has thus predicted six more weeks of winter in the south.  boo.  hiss.



The littles dined on groundhog sammies and a variety nuts, berries and “grasses” that make up the rodent’s diet.  Who knew the Groundhog’s Garden book would prove so useful on so many fronts when the baby threw it up on the check-out table at the library at the last possible second?!?!



And for dessert, the littles gobbled up Punxsutawney Pudding Cups in an ode to Beau Lee’s northern rival.

We were thrilled when Bird popped in just in time for the celebration!!



I only wish I’d had more time to love on this sweet gal before heading out to the day’s sporting obligations…
 

It’s high time to hit the hay around these parts!

Groundhog Day Roundup

If you’ve spent more than two seconds reading this blog then you know how I loooove a good celebration.  Well, the often overlooked Groundhog Day is no exception!  This year I’ll probably do the same lunch and hot chocolate snack I’ve done the past few years but I thought it would be fun to share in advance in the event that y’all want to join in on the fun with your littles!!

Groundhog Day Treats

In this household, we exclusively subscribe to the psychic prophecies of our very own hometown groundhog, General Beau Lee, who boasts honorary doctorates (which really says something about the University of Georgia), various other distinctions, and most importantly a 94% accuracy rate (that designer imposter, strangely named "Punxsutawhatever" rodent up North manages barely 85%.)  And while it’s too early yet to know whether today will bring six more weeks of (the mildest ever) woe-be-gone winter or if Spring is on the horizon, sure as the sun I’ve got my fingers crossed for the latter!

Like last year, the littles awoke to Groundhog Day hot chocolate.  They couldn’t have been more tickled with this early morning treat!  And since I had all this stuff out and my creative juices were flowing, I threw together a quick little Groundhog Day lunch for the PCP.  Now, I kinda flew by the seat of my pants on these, but here’s how the 2012 version went down…

Groundhog Hot Chocolate
1. Use an Oreo Fudge Crème cookie as the base (go with the mint variety…cross my heart promise they are as good as Thin Mints.)
2. Slightly melt two chocolate chips in the microwave for the ears.  I just tested every 30 seconds until they were pliable and stuck nicely to the cookie.
3. Use a tube of pre-made white icing (I keep on hand at all times) to adhere edible eyeballs (found mine at AC Moore), slivered almond teeth and a red m&m nose.
4. To attach mine to my mugs, I slightly melted two more chocolate chips and used them to adhere the completed cookie.  Fill up the mug with your hot beverage of choice!



Groundhog Sandwich
1. Use kitchen shears or a cookie cutter to form two large round bread slices.  Fill your sandwich as normal.
2. Use cream cheese to adhere more edible eyeballs, a half cherry tomato nose and slivered almond teeth.
3. From a third slice of bread, cut two ears.  Tuck them into the sandwich.
4. If desired, use an edible marker to draw on a mouth and eyebrows.  I think this made mine look a little hokey but whatev.
