Pink Velvet & Berry Parfait

My husband rocks. He is so passionate about cooking & even though he's not a professional chef, his meals really impress me.

I'm always posting them on my instagram, so if you follow me there, you'll see what I mean. He made these amazing parfaits for the LOVE LETTERS/Cartas De Amor digital Mag we put together, they were delicious! Below he'll add the recipe in case you want to impress your significant other! You can view the entire Love Letters magazine here.

Also a quick shout out to Holly of Decor8 for sharing the 'Love Letter' mag on her blog! Thank you!

Here he is prepping...

Parfaits:
Cake (any kind of sponge or regular cake like the pink velvet)
1/2 cup heavy cream
1/4 cup confectioner's sugar (powdered)
1/2 tsp vanilla extract
Berries - cut strawberries, blueberries, blackberries, raspberries

In a chilled bowl, whip the heavy cream with a whisk attachment until it begins to peak. Add the sugar and vanilla and finish whipping - should be light, soft peaks.

Cut small cubes of the cake and place in the bottom of a parfait or tall shooter glass (if you don't have those, champagne or wine glasses also work well). Carefully spoon about 2 tsp of cream on top then gently knock the bottom of the glass to force it down. Add a layer of berries, then another layer of cream. Top with an exceptional berry, or even a nice bing cherry!

Stay tuned for a few more sweeeeeeet Valentine's Day recipes this week!

Food: Brownie French Toast

Hello everyone it is Lori and Michelle from pure2raw. Ready for a new, fun and tasty recipe?

Who loves having a little chocolate for breakfast? Who loves french toast? Ever have them together?? Call us crazy, but we wanted something chocolate for breakfast, and had some frozen millet bread that needed to be used up. So after some thought, we decided on brownie french toast! Now this is a breakfast everyone in your family will sure to love. We made ours gluten free too!

 Pure2raw recipe:

Brownie French Toast Ingredients:
  • slices of your favorite bread (we used a gluten free millet bread)
  • 1 brownie recipe (we used this one of ours - chewy gluten free brownies)
  • 3 eggs
  • 3/4 teaspoon cinnamon
  • 2 tbsp sugar
  • 1/2 - 2/3 cup non-dairy milk or milk of choice (we used almond milk)
Directions: Make your cinnamon sugar mixture first. Take the 2 tbsp sugar and mix it with cinnamon in a bowl. Next whisk together your eggs and milk with the cinnamon and sugar. Then dip you bread into the egg mixture and place into 9x9 square baking dish.

Keep dipping bread slices till most of your egg mix is used up. Then you can just pour over the remaining egg mix if you want. Next in another bowl, combine all your gluten free brownie ingredients into a bowl and stir together. Pour brownie batter over bread slices. **you may use any brownie recipe of your liking.

Place into a pre-heated oven of 350 and bake for 30-35 minutes. Slice and enjoy.

a healthy, little sweet FUN breakfast for you and your family to enjoy.

We left our brownies a little undercooked. We like rich, fudgy brownies. Anyone else?

Breakfast is served. Enjoy! This brownie french toast would also be great for a dessert. Recipe is very flexible. Just have a little fun with it.

A SWEET change of Pace.....

Sprinkles Cupcakes located in Beverly Hills, California has made a huge splash on the dessert scene. I have to tell you that I've tasted some of their little cupcakes and they are the best I've had! The carrot cake and the dark chocolate are my faves!! Super soft and so moist! I recommend anyone visiting CA. to stop by and grab one or two or 3! Its too bad they don't deliver to Vegas, however there will be a Sprinkles shop here soon! The packaging is so pretty & colorful, love it. Happy Mom's Day.
